This will allow you to negotiate your way more easily and it will be less likely for you to get traffic ticket.  You can be pulled over due to minor issues, such as excessive smoke that billows out of the exhaust or a broken tail light. So, if you are doing nothing wrong, it is important to avoid making your situation more difficult. When the officer approaches your car, he will do that carefully, so it is important to put your hands where the officer can see them. A good practice is to put both your hands on the wheel. This is a good etiquette and the officer will know that he is dealing with a knowledgeable and cooperative individual.
